Manual harvesting to respect the integrity of the grapes, which are later selected on the selection table. Fermentation at 28ºC in stainless steel, then aged for 8 months in Allier French oak barrels, and resting from 8 to 12 months in the bottle. We seek a concentration wine that reflects the purity of a thousand year old terroir, and we extract the frank typicity of the varieties that make it harmoniously.
The millennial soils that make up our terraces are poor in organic matter, unless it makes them Little fertile and that together with our Mediterranean climate is key to giving birth to clusters of concentration. They are calcareous, slightly sandy and clayey, which makes them very permeable to precipitation, and have a series of rich soil characteristics that add minerality to wine. All in all with the ancestral techniques of conduction in the glass of the vineyard makes the perfect bond to give an idyllic raw material that facilitates the production of a product that expresses the identity of our land.
High-layer cherry color, intensely violet trimmings. In nose ripe wild fruit, intertwined with vanilla, spicy and balsamic notes that bring aging in a barrel.
